Classic Tuna Nicoise Pasta Salad
Tuna Nico Salad is a refreshing summer dish that combines the flavors of the classic Nicoise with pasta. It's a perfect picnic or potluck dish that is easy to make and can be served cold or at room temperature.
Ingredients
- 8 oz Fusilli pasta
- 2 cans tuna, drained and flaked
- 1 Cup cherry tomatoes, halved
- 1⁄2 Cup pitted Kalamata olives, halved
- 1⁄2 Cup chopped red onion
- 1⁄4 Cup Chopped fresh parsley
- 1 tablespoon capers
- 2 garlic cloves, minced
- 2 anchovy fillets, finely chopped
- 1⁄4 Cup extra-virgin olive oil
- 2 tbls red wine vinegar
- salt and pepper
- 4 boiled eggs, peeled and halved
- Fresh herbs, such as basil and thyme, to garnish

Directions
Bring a large of salted water to a boil, add the pasta and cook until al dente, according to the instructions on the package. Drain and rinse with cold water.
In a large bowl, combine the tuna, cherry tomatoes, Kalamata olives, red onion, parsley, capers, garlic, and anchovy fillets.
Add the cooked pasta and toss to combine.
In asmall bowl whisk together the olive oil and red wine vinegar. Season with salt and pepper to taste.
Pour the dressing over the salad and toss to coat.
Divide the salad among four plates. Top with boiled eggs and fresh herbs.
Serve and enjoy!
