Comforting Italian Chicken Penne Pasta
There is something supremely satisfying about cooking and enjoying this hearty chicken penne dish.
Ingredients
- 2 chicken breasts, boneless and skinless
- 2 cups penne pasta
- 1⁄4 Cup olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes, drained
- 1⁄2 Cup white wine
- 1⁄2 Cup fresh basil leaves, chopped
- 1⁄2 Cup Parmesan cheese, grated
- salt and pepper to taste

Begin by boiling a large pot of lightly salted water for your pasta. This will ensure that the pasta doesn't stick and enhances the flavor.
While the water is heating, cut the chicken breasts into bite-sized pieces. Seasoning the chicken at this stage imparts flavor deep into the meat. Use salt and pepper, or any other preferred spices.
In a large skillet, heat the olive oil over medium heat. Begin to sauté the chicken pieces until they are cooked through and lightly golden. This process usually takes about 7-10 minutes depending on the size of the chicken pieces.
Add the finely chopped onions and minced garlic to the same skillet and sauté them until they become translucent. This slow cooking process allows the delicate flavors of the onion and garlic to be released, complementing the chicken beautifully.
As the onion and garlic begin to cook, your water should be boiling. Add the penne pasta and cook according to packet instructions until al dente.
Add the drained diced tomatoes, white wine, and red pepper flakes to the skillet. Simmer this blend for about 10 minutes to allow the flavors to meld together. The alcohol in the white wine evaporates leaving behind a deep, rich taste that pairs well with the acidity of the tomatoes.
Drain your pasta and add it to the skillet with your chicken and sauce. Mix them together and let them cook for another 2 minutes, so the pasta absorbs the flavors from the sauce.
To finish, remove from heat and stir in the fresh basil and parmesan cheese. The heat of the dish will gently melt the cheese and the basil will retain its vibrant color.
