Creamy Chicken and Bacon Spaghetti Carbonara

Ingredients
- 4 chicken breasts (diced)
- 200 g of bacon (diced)
- 300 ml of double cream
- 1 egg
- 100 g of grated Parmesan cheese
- 200 g of spaghetti
- 1 tablespoon of olive oil
- salt and black pepper to taste
- 2 cloves of garlic (minced)
- A handful of fresh parsley (chopped)

Directions
Cook the spaghetti in a large saucepan of boiling salted water according to packet instructions.
Heat the olive oil in a large frying pan over medium heat. Add the bacon and cook until crispy. Remove the bacon from the pan and set aside.
In the same pan, cook the chicken until it's browned and cooked thoroughly.
Add the garlic to the pan and stir until it’s fragrant.
In a separate bowl, mix together the double cream, egg, and half the parmesan cheese. Season with salt and black pepper.
Drain the spaghetti, reserving some of the pasta water.
Add the chicken and bacon to the spaghetti then pour over the cream mixture. Toss until everything is combined. (Add a bit of the pasta water if the sauce is too thick)
Sprinkle the remaining parmesan cheese and the chopped parsley on top before serving.
