- 250 g pasta (macaroni or your choice)
- 425 g canned tuna in oil, drained and flaked
- 2 cups milk
- 1⁄4 Cup butter
- 1⁄4 Cup all-purpose flour
- 1 Cup grated cheddar cheese, plus extra for topping
- 1⁄4 teaspoon ground nutmeg
- salt and pepper to taste
- 1⁄2 Cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1⁄4 Cup finely chopped parsley for garnish

Preheat your oven to 180°C (350°F).
Cook pasta according to its package instructions until al dente. When done, drain and set aside.
In a medium saucepan, melt the butter over moderate heat. Add onion and garlic. Sauté until onion is translucent.
Sprinkle flour over the butter mixture and stir well to form a roux. Cook for 2 minutes, then gradually whisk in milk.
Keep stirring until the milk mixture comes to a boil and thickens into a sauce.
Add cheese, nutmeg, salt, and pepper to the sauce. Stir until the cheese is fully melted.
Remove the sauce from heat and mix in the flaked tuna.
Combine the cooked pasta and tuna mixture. Ensure that every piece of pasta is coated with sauce.
Transfer this to a baking dish, then sprinkle extra cheese and breadcrumbs on top.
