Crispy Christmas nut cookies
I love baking these nut cookies at Christmas time. They remind me of my childhood and the cozy hours I spent in my grandmother's kitchen. The spice of the nuts, the tender, buttery cookie dough and the light touch of vanilla sugar make them irresistible. I always look forward to baking them and look forward even more to giving them as gifts and enjoying them.
Ingredients
- 200 Gram butter (room temperature)
- 150 Gram sugar
- 1 TL vanilla sugar
- 1 Pinch salt
- 2 Egg yolks
- 400 Gram flour
- 100 Gram Mixed nuts (hazelnuts, walnuts almonds) coarsely chopped
- Powdered sugar for dusting

Directions
To make the nut cookies, beat the butter, sugar, vanilla sugar and salt in a large bowl until creamy. The butter should be soft, not melted, to achieve a good consistency.
Add the egg yolks and continue stirring until everything is well mixed.
Gradually add the flour and knead the dough until it is smooth. You can either do this with your hands or a dough machine.
Then add the chopped nuts and continue kneading the dough until the nuts are well distributed. The use of different types of nuts gives the cookies a varied flavor and an interesting texture.
Shape the dough into a ball, cover it and leave it to rest in the fridge for about 30 minutes. This step helps the cookies to keep their shape when baking.
Preheat your oven to 180 degrees and place baking paper on your baking trays.
Shape the dough into small balls or, if you wish, into small "crescents" or croissants and place them on the baking trays. Optionally decorate with a nut on top.
Bake the nut cookies for 15-20 minutes or until lightly browned around the edges.
Leave the cookies to cool on the tray and then sprinkle with a little powdered sugar. I hope you enjoy these delicious nut cookies as much as I do!
