1. Step

Peel the figs. Chop the vegetables by cutting the onion into small cubes. Then continue with the green pepper, then the red pepper and the tomato. Peel and chop the garlic.

2. Step

Crush the figs with the help of a blender. Then, pass through a sieve to completely remove the seeds and obtain the juice.

3. Step

Put 3 tablespoons of olive oil in a pot and heat over medium heat. Immediately add the garlic with the oil still cold and when it is hot, add the onion, which should be cooked for about 5 minutes or until transparent.

4. Step

Add the red pepper and then the green pepper. Season with salt, chilli and ground black pepper. Stir everything well and cook for 5 more minutes over medium heat.

Add the tomato while stirring and add the cinnamon, cumin and sugar. Cook for about 10 minutes. Add the vinegar and cook for a couple of minutes more, stirring frequently.

6. Step

Add the fig juice and cook for 30 minutes. Remember to stir it from time to time so that it doesn't burn.

7. Step

Remove from the heat and use it or pack it to be consumed within the next 2 months.
