Delicious Chorizo & Mozzarella Gnocchi Bake
The Chorizo & Mozzarella Gnocchi Bake is a delicious and easy dish to make that will surely bring warmth to your dining table. Ingredients
- 500 g of gnocchi
- 200 g of chorizo sausage, chopped
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 can of chopped tomatoes
- 200 g of mozzarella cheese, cut into small cubes
- A handful of fresh basil, chopped
- olive oil
- salt and pepper to taste

Directions
Preheat the oven to 200C/180C fan/gas 6.
Heat a bit of olive oil in a large frying pan and cook the chorizo until it starts to release its oils.
Add the onion and garlic, and continue to cook until the onion becomes soft and translucent.
Add the gnocchi to the pan and stir to combine with the chorizo and onions.
Add the can of chopped tomatoes and half of the basil to the pan, season with salt and pepper and let it simmer for about 10 minutes.
Transfer the mixture into a baking dish and top with the cubes of mozzarella cheese.
Put the dish in the oven and bake for about 15 minutes, or until the cheese is bubbly and golden.
Sprinkle the remaining basil over the dish before serving.
