Dietary Carrot Soup
A light, healthy, yet nutritious carrot soup that is a perfect solution for a dietary lunch or dinner.

- 500 g carrot
- 1 pcs onion
- 2 pcs cloves of garlic
- 1 pcs butter
- 11⁄2 l vegetable broth
- 1 pcs White pepper
- 1 pcs nutmeg
- 2 pcs bay leaf
- 1 pcs lemon

1. Step
Peel and chop the carrot, onion and garlic into smaller pieces.
2. Step
Melt the butter in a pan and add chopped vegetables. Fry until soft.
3. Step
Add vegetable broth, white pepper, nutmeg, and bay leaf. Boil for 20-30 minutes until the carrot is soft.
4. Step
Remove the soup from the heat, remove the bay leaf, and blend until smooth.
5. Step
We season the soup with lemon juice, add salt and pepper to taste.
