Easy Creamy Tomato Chorizo Pasta

Ingredients
- 8 ounces chorizo sausage, casing removed and crumbled
- 8 ounces penne pasta
- 1 tablespoon olive oil
- 1 onion, choppe
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 tbls tomato paste
- 1 teaspoon oregano
- 1 teaspoon dried basil
- 1⁄2 teaspoon red pepper flakes (optional for added heat)
- salt and pepper to taste
- fresh parsley, chopped

Directions
In a pot, cook the penne pasta according to package until al dente. Set aside.
In a large skillet, heat the olive oil over medium heat. Add the crumbled chorizo sausage and cook until browned, 5-7 minutes. Remove cooked chorizo from the skillet and set aside.
In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and garlic becomes fragrant, about 2-3 minutes.
Add the diced tomatoes and tomato paste to the skillet and stir well.
Add cooked chorizo sausage back to the skillet and add the dried oregano, dried basil, pepper flakes, salt and pepper. Stir to combine
Add the cooked penne pasta to the skillet and toss it well until coated with the chorizo tomato sauce. Cook for an additional 3 minutes to heat through.
Serve the Chorizo Pasta hot, garnished with fresh parsley.
