Preheat the oven to 200°C. Wash and peel the carrots. Remove the ends, cut the carrots in half lengthwise and then in three.

2. Step

Wash and remove the ends from the zucchini. Cut it in half lengthwise and then into pieces.

3. Step

Wash the potatoes and cut them into small pieces.

4. Step

Peel and cut the red onion in half and then into quarters.

On a baking sheet covered with baking paper, place: carrots, zucchini, potatoes and red onion. Add a good drizzle of olive oil and the herbes de Provence. Add salt and pepper and mix well.
