- 1 l coconut milk
- 1 l almond milk
- 200 g coconut oil
- 2 kg Eggplants
- 1 kg carrots
- 1 red bell pepper
- 1 yellow bell pepper
- 1 tomato
- 250 g green curry
- 200 g coconut flour
- 1 zucchini
- 1 garlic
- 1 onion

1. Step
In a saucepan, add a tablespoon of coconut oil.
2. Step
Chop the eggplant and carrots into small squares. Cut the onion and bell peppers in julienne.
3. Step
Place the eggplant in the saucepan and brown it, add salt. While it is browning, add a pinch of garlic and a pinch of ginger. Stir and add the green curry.

Add the carrot, red bell pepper, yellow bell pepper, onion and zucchini.

Add the litre of almond milk. Then, add the coconut flour. Stir and let it simmer for 5 minutes.
