Easy Perfect Lemon Salmon Patties
Salmon Patties are a delicious and nutritious meal option that can be enjoyed for lunch or dinner. Serve them with a side salad or some roasted vegetables for a complete and satisfying meal.
Ingredients
- 2 cans salmon, drained and flaked
- 1⁄2 Cup breadcrumbs
- 1⁄4 Cup mayonnaise
- 1⁄4 Cup diced red bell pepper
- 1⁄4 Cup diced onion
- 2 tbls Chopped fresh parsley
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1⁄2 teaspoon garlic powder
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 2 tbls olive oil, for frying

Directions
In a large bowl, combine the flaked salmon, breadcrumbs, mayonnaise, diced red bell pepper, diced onion, parsley, lemon juice, Dijon mustard, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
Shape the mixture into patties, approximately 3 inches in diameter and 1/2 inch thick. You should be able to make around 8 patties from the prepared mixture.
Heat the olive oil in a large skillet over medium heat. Place the patties in the skillet and cook for 3-4 minutes on each side, or until they are golden brown and cooked. Make sure to flip them carefully to avoid breaking them apart.
Once cooked, transfer the patties to a paper-lined plate to drain any excess oil. Serve and enjoy!
