Exquisite hake in sauce for christmas
This recipe for hake in sauce is one of my favorites at Christmas time. Not only because of its mild and delicate flavor, but also because it is very easy and quick to make. In addition, hake is a fish that takes advantage of the flavors of the ingredients with which it is cooked quite well and the sauce that will accompany this dish is delicious and combines perfectly.

Directions
Season the hake loins with salt and pepper and lightly coat in flour. This step is key for our hake to be well sealed and keep all its juiciness while cooking.
In a large frying pan with olive oil, fry the hake loins over medium heat for 2 minutes on each side. Remove from heat and set aside.
In the same pan, add the finely chopped onion and garlic. Cook over low heat until golden brown. Remember that by cooking over low heat, you will get the flavors to concentrate and blend better.
Add the bay leaf, the white wine and allow to reduce for 10 minutes so that the alcohol evaporates and only the flavor of the wine remains.
Place the hake loins back in the pan with the sauce, cover and cook for 5-7 minutes over medium heat, so that the hake is well impregnated with the sauce.
Serve the hake loins bathed with the sauce, sprinkle with a little chopped parsley and serve immediately. Remember that fish should be consumed immediately after cooking to enjoy its flavor and texture.
