1. Step

The day before grilling, we debone the knees, cut them into large cubes. We add salt and all the spices. Mix well and put away in the fridge until the next day. We also add the bones to the meat, we don't throw them away. We also grill them, they taste excellent.

2. Step

The next day, before the barbecue, lightly grill the meat (not for long, just to crust it on top). Then put it in a pot (ideally a thick cast-iron or earthen pot), pour beer over it and cover it, returning to the grill. Leave the pot on the grill for about 2 hours at approximately 250 degrees. Caution, not directly over the fire. Serve with bread, vegetables, and dressing as you wish.
