Homemade Old-Fashioned Tomato Ketchup

Ingredients
- 10 ripe tomatoes
- 1 onion, chopped
- 1⁄2 Cup apple cider vinegar
- 3 cloves of garlic, minced
- 1⁄4 Cup With
- 1⁄2 teaspoon ground mustard
- 1⁄2 teaspoon ground cinnamon
- 1⁄2 teaspoon ground allspice
- 1⁄2 teaspoon Kosher salt
- 1⁄4 teaspoon ground black pepper

Directions
Start off by blanching the tomatoes. Make an X with a knife on the bottom of the tomatoes, then drop them into a pot of boiling water for about one minute. Immediately place them into a bowl of cold water, then peel the skin off.
Cut the tomatoes into quarters and scoop out the seeds.
Combine the tomatoes, onion, apple cider vinegar, garlic, honey, ground mustard, ground cinnamon, ground allspice, kosher salt and ground black pepper in a large pot. Stir well.
Reduce heat to low and let it simmer for about 90 minutes, or until it thickens into a ketchup consistency.
Allow the mixture to cool a bit before blending it until smooth.
Pour the ketchup through a fine-mesh strainer to remove any chunks, pushing down to get out as much liquid as possible.
Store your homemade ketchup in the refrigerator. It will keep for about 2 weeks.
