Directions
Preheat your oven to 220°C (425°F). From my experience, getting the oven preheated just right is a key factor in achieving an ideal, golden brown crust.
Mix together the all-purpose flour, whole wheat flour, sugar, baking powder, and salt in a large bowl. This dry mix is essential for scones, and mixing it well ensures consistency.
Add the chilled, diced butter to the mix. In my many attempts, I’ve found that using your fingertips to blend the butter into the flour until it resembles coarse crumbs results in a fluffier scone.
Next, stir in the chopped dates. Make sure they’re distributed evenly for that consistent sweetness in each bite.
Combine the milk and lightly beaten egg, then add this to your flour mix. Stir gently until just combined, I cannot stress enough how important it is not to over-mix it. This will give your scones a light and tender crumb.
Empty your dough onto a lightly floured surface, and gently knead it until it all comes together. Remember, less handling the better.
Roll out the dough to approximately 2 cm thickness, and cut into rounds using a cookie cutter or glass rim. Every time, I find that using a round cutter yields the best results.
Place the rounds onto a baking sheet, leaving around 2 cm space between each scone.
Bake for 12 to 15 mins, or until your scones are a mouthwatering golden brown.
