Directions
Start by preheating your oven to 400° F (200° C). My experience has taught me that accurate bake times always start with a preheated oven.
Take each chicken breast, season with salt and pepper, and lightly sprinkle with paprika if desired.
Wrap two slices of bacon around each chicken breast. Secure with toothpicks if needed.
Heat up some olive oil in a non-stick frying pan over medium heat. Once heated, place the wrapped chicken in the pan and cook until the bacon is thoroughly browned. This should take about 5 minutes on each side.
Place the chicken in a baking dish. Apply a generous amount of BBQ sauce over the chicken, then top with the grated cheese.
Bake for 25 minutes or until the chicken is thoroughly cooked and the cheese is melted and slightly browned. It's always wise to check for doneness using a meat thermometer. The internal temperature of the chicken should reach 165° F (74° C).
Let it rest for around 5 minutes before serving. This step is essential as it allows the flavors to really mingle and intensify.
Enjoy your Chicken Mignon Bombs with a side of steamed veggies, or roast potatoes.
