Clean the fish and make three incisions on each side of the fish.
To make the marinade, add a handful of dill, lime juice, olive oil, salt, and pepper to a blender and blend.
Season the fish with the marinade on all sides.
Add to the belly of the fish a few sprigs of dill, a few slices of lime or lemon, and a few cubes of butter.
Add flaked salt and fresh pepper to both sides of the fish.
Place the fish in a special mesh to make grilled fish and to be able to turn it on the grill quickly. The olive oil will help prevent the skin from sticking.
Place the fish on a scorching grill for 5-10 minutes on each side.
