How to Make Perfect Authentic Sushi Rice

Sushi Rice or Shari is the foundation to any good sushi. The perfect sushi rice should be slightly sticky but not mushy, with each grain still retaining its shape. It is gently seasoned with a mixture of vinegar, sugar, and salt, giving it a mild, tangy flavor that complements the ingredients typically used in sushi filling.

1. Step

Rinse the rice under cold water until the water runs clear.

2. Step

Let the rice drain in a fine-mesh sieve or colander for 10 minutes.

3. Step

Place the rice and water in a rice cooker. Cook according to manufacturer's instructions.

4. Step

While the rice cooks, combine the rice vinegar, sugar, and salt in a small saucepan. Cook over medium heat just until the sugar dissolves. Set aside.

5. Step

When the rice has finished cooking, transfer it to a large bowl.

6. Step

Drizzle the vinegar mixture over the rice. Using a rice paddle or a wide spatula, fold and cut the rice to incorporate the seasoning. Do this gently to avoid smashing the grains of rice.

7. Step

Allow the rice to cool to room temperature before using it for sushi.
