Ingredients
For the Filling:
- 4 eggs
- 1⁄4 Cup mayonnaise
- salt to taste
- Ground black pepper to taste
- 1⁄2 teaspoon mustard sauce
- 1 tablespoon chopped fresh parsley or dried
For the Sandwich:
- 4 slices of bread
- 2 Lettuce leaves (optional)
- Additional mayonnaise for spreading

First, cook eggs in salted boiling water for about 10 minutes until hard-boiled. Once cooked, remove from heat, cool, peel and chop them finely.
In a mixing bowl, combine chopped eggs, mayonnaise, salt, black pepper, mustard sauce, and parsley. Mix them well until you get an even, creamy texture.
Spread a thin layer of mayonnaise onto each slice of bread.
Dividing evenly, place lettuce leaves (if using) on two slices of bread.
Evenly spread egg mayo filling over the lettuce.
Cover with the remaining two slices of bread.
Cut each sandwich in half and serve immediately or wrap them up for a later snack.
