Japanese Onigirazu Chicken Rice Sandwich
Onigirazu, known as rice sandwich in English, is a popular and trendy kind of onigiri (rice ball) in Japan. It's an easy and delicious way to enjoy the flavors of Japan, perfect for packed lunches, picnics, or a quick snack at home. You can fill Onigirazu with any ingredients you like, making it a flexible recipe to suit your tastes.
Ingredients
For the rice:
- 4 cups of cooked sushi rice
- 1 teaspoon of rice vinegar
- 1 tablespoon of sugar
- 1⁄2 teaspoon of salt
For the filling:
- 4 letters of nori (seaweed)
- 1 cucumber, thinly sliced
- 1 avocado, sliced
- 1 chicken breast, cooked and shredded
- 4 Lettuce leaves
- 1 tablespoon of soy sauce
- Mayonnaise, as required
- Salt and pepper, to taste

Directions
Start by seasoning the cooked sushi rice. Combine the rice vinegar, sugar, and salt in a bowl until dissolved. Mix this into the cooked sushi rice and let the rice cool.
Lay a piece of saran wrap on a clean surface and place a sheet of nori on top.
Spread a quarter of the sushi rice in a square shape in the middle of the nori.
Layer the cucumber, avocado, chicken, and lettuce on top of the rice. Drizzle with soy sauce and mayonnaise, then season with salt and pepper.
To wrap, fold in the four corners of the nori, one at a time, towards the center over the filling, pressing down lightly. The saran wrap will help keep everything together.
Repeat the process with the rest of your ingredients.
Cut each onigirazu in half with a sharp knife and serve.
