Directions
Start by cutting the bread into small pieces and soaking it in some water. This is a trick I learned to make the bread softer and easier to handle with the Thermomix.
Pour the oil into the glass of the Thermomix, add the peeled garlic cloves and program 5 minutes, Varoma temperature, speed 1.
Add the bacon or chorizo, the onion and the green bell pepper cut into pieces. Program 15 minutes, Varmoa temperature, left turn and spoon speed. This process will allow all the ingredients to cook evenly and absorb the flavors.
Add the soaked bread and a pinch of salt, and program again 15 minutes, Varoma temperature, left turn and spoon speed. In this step, the bread will absorb the essence of the other ingredients, taking on an incredible flavor.
Once the crumbs are ready, remove them from the Thermomix and serve on individual plates. You can present them with a fried egg on top, this will give them juiciness and an exquisite contrast of flavors.
Tips: Remember that the consistency of the crumbs is something very personal, if you like them drier, reduce the amount of water, if on the contrary, you like them juicier, add a little more. The important thing is that you enjoy the process and the flavor that the Thermomix brings out in this traditional recipe.
