Mini tortilla with chicken
Delicious mini tortillas filled with shredded chicken and avocado.

- 1 packing of mini tortillas
- 2 pcs chicken breast
- mixed salad leaves
- 1 packing cherry tomatoes
- 1 pcs avocado
- Parmesan cheese
- red tabasco
- 1 pcs lime
- coriander
Marinade for meat
- 5 tablespoon soy sauce
- salt
- ground black pepper
- 1 clove garlic
- 5 tablespoon olive oil

Directions
Meat should be marinated for at least 2 hours before preparation. Prepare the marinade by mixing the ingredients. Place the chicken breasts in the marinade and stir. Place in the refrigerator for a few hours.
When the meat is marinated, sear it whole on each side in a deep frying pan. Pour in the rest of the marinade and reduce the heat to a gentle simmer. Cover with a lid and simmer for about 1½ hours. Add water if necessary.
The meat will be tender and easy to tear with a fork. Tear into thin pieces and leave in the sauce.
Preheat the oven to 356°Fahrenheit and heat the first tortilla for half a minute. Remove it and place a spoonful of meat, lettuce, cherry tomatoes, avocado slices and fresh cilantro on the still warm tortilla. Add the red Tabasco and lime drops, fold in half and sprinkle with Parmesan cheese.
