Perfect Crispy Pan Fried Barramundi

Ingredients
- 4 Barramundi fillets, skin on
- Salt & fresh ground pepper to taste
- 2 tbls olive oil
- 4 cloves garlic, minced
- 1 tablespoon butter
- Juice of one large lemon
- 2 tbls fresh chopped parsley
- Lemon slices for garnish

Directions
Rinse the barramundi fillets and pat dry with paper towels. Season both sides with salt and fresh ground pepper.
Heat the olive oil in a large frying pan over medium-high heat.
Once hot, fry the barramundi fillets, skin side down, for 5 minutes until the skin is crisp. Flip and cook the other side for additional 3 minutes until golden and cooked through. Remove from the pan and set aside.
In the same pan, add the minced garlic and butter. Sauté for a minute until the garlic starts to brown.
Pour in the lemon juice and bring to a simmer. Cook for another minute allowing the flavors to blend.
Return the barramundi fillets to the pan and spoon the garlic butter sauce over the top. Simmer for a couple of minutes.
Sprinkle with fresh parsley, garnish with lemon slices and serve immediately.
