Quick & Easy Coriander Cilantro Pesto Sauce Dip
Coriander Pesto is a delightfully refreshing twist on the traditional pesto sauce. As the name suggests, this aromatic green sauce is made from coriander leaves (also known as cilantro) combined with parmesan cheese and pine nuts. It's a versatile condiment that can be served with pasta, spread onto sandwiches, or used as a dip.
Ingredients
- 2 cups fresh coriander leaves
- 1⁄2 Cup parmesan
- 0.3 Cup pine nuts
- 2 cloves Garlic, peeled
- 1⁄2 Cup extra-virgin olive oil
- Salt and freshly ground black pepper to taste
- Lemon juice to taste

Directions
Begin with toasting the pine nuts over medium heat until they're lightly golden. Be careful to avoid burning them.
Add coriander leaves, Parmesan cheese, toasted pine nuts, and peeled garlic cloves in a food processor.
Process until the ingredients are finely chopped.
Slowly pour in the olive oil while the food processor is still running. Continue to process until the mixture is smooth.
Season your pesto with salt, freshly ground black pepper and lemon juice according to your taste.
Your homemade coriander pesto is now ready to serve. It can be refrigerated in an airtight container for up to a week.
