Quick & Easy Traditional Curried Sausage Recipe

Ingredients
- 8 sausages (any variety you prefer)
- 2 tbls vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbls curry powder
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 can diced tomatoes
- 1 Cup coconut milk
- Salt and pepper,
- Fresh cilantro, for garnish (optional)

Heat vegetable oil in a large skillet over medium-high heat.
Add the sausage to the skillet and cook until browned on all sides. Remove from the skillet and set aside.
In the same skillet, add the diced onion and minced garlic. Sauté until the onion turns translucent and the garlic becomes fragrant.
Reduce the heat to medium and add the curry powder, turmeric, cumin, paprika, and ground coriander. Stir well to coat the onions and garlic with the spices. Cook for an additional minute to allow the flavors to meld.
Add the sliced bell peppers to the skillet and cook for about 5 minutes, until they start to soften.
Stir in the diced tomatoes and coconut milk. Season with salt according to taste.
Bring the mixture to a simmer and add the cooked sausages back into the skillet. Stir well, ensuring sausages are coated in the curry sauce.
Cover the skillet and let it simmer for about 15 minutes, allowing the flavors to meld and the sauce to thicken.
Serve the sausages over rice or with crusty bread, and garnish with fresh cilantro, if desired.
