Raw cheesecake

This version of cheesecake is a healthier alternative to the classic cheesecake. It is dairy-free, sugar-free and no-bake. It is completely raw - RAW, full of flavour and will delight any cake lover.

For the bottom layer:

  • 200 g nuts Added to
  • 200 g pitted dates Added to
  • pinch of sea salt Added to

For the top layer:

  • 200 g cashew nuts Added to
  • 100 ml agave or maple syrup Added to
  • 80 ml coconut oil Added to
  • lemon juice Added to
  • Vanilla extract for flavouring Added to
  • Fruit for decoration Added to

1. Step

To make the bottom layer, blend the nuts, dates and a pinch of salt in a food processor until a sticky mixture forms. Transfer the mixture to a baking tin and press it well into the base.

2. Step

Soak the cashew nuts in cold water for at least 4 hours or overnight.

3. Step

For the top layer, blend all the other ingredients in a blender (the nuts should be rinsed and the water poured off before using) until a smooth and creamy mixture is formed. Spread this evenly over the bottom layer.

4. Step

Put the cake in the fridge for at least 5 hours, or even better overnight.

5. Step

Garnish with fruit, nuts or chocolate before serving. Enjoy!
