Directions
In a large mixing bowl, combine the ground beef, onion, garlic, carrot, zucchini, parsley, dried oregano, paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.
Shape mixture into small oval-shaped patties, about the size of a ball.
Place bread crumbs on a plate and season with salt and pepper. In another bowl, beat the eggs.
Dunk each rissole into the beaten eggs, making sure to coat it. Then, cover the rissole in the seasoned bread crumbs, pressing to adhere the crumbs to the surface. Repeat this step for each rissole.
In a large frying pan, heat enough vegetable oil over heat to cover the rissoles. Carefully place the rissoles in the hot oil and fry for about 3-4 minutes, or until golden brown and cooked through.
Once done frying, transfer the cooked rissoles to a paper towel-lined plate to remove any excess oil.
Serve the rissoles hot as a main dish alongside your choice of side dishes or as appetizers with dipping sauces.
