In a small saucepan, combine the soy sauce, mirin, honey (or brown sugar), minced garlic, and minced ginger.

Place the saucepan over medium heat and stir until the honey (or sugar) is dissolved.

If you prefer a thicker sauce, mix the cornstarch with a tablespoon of water in a separate bowl to create a slurry. Add the slurry to the saucepan and stir continuously until the sauce thickens. Remove from heat.

Allow the teriyaki sauce cool before using. It will continue to thicken slightly.
