Simple Salmon Vegetable Sauce Stir Fry
Take your regular stir-fry up a notch with this delicious Salmon Stir Fry recipe. It's a nutritious and colorful dish that combines tender salmon fillets with an assortment of vegetables mixed in a flavorful sauce. Ingredients
- 2 Fillets salmon
- 2 tbls vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 carrot, sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 4 green onions, sliced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch dissolved in two tablespoons water
- salt and pepper to taste

Directions
Start by cutting the salmon fillets into bite-sized chunks. Season them with salt and pepper.
In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the salmon chunks and stir fry until they're cooked through, about 5-7 minutes. Once done, remove the salmon from the wok and set them aside.
In the same wok, add the ginger and garlic and stir fry until fragrant, about 30 seconds to a minute.
Add in the sliced zucchini, carrot and bell peppers. Stir fry until the vegetables are tender, about 3-5 minutes.
Add the soy sauce, oyster sauce, hoisin sauce and the dissolved cornstarch to the wok. Stir well to combine the vegetables and sauce. Cook for 1-2 minutes until the sauce thickens.
Add the cooked salmon back to the wok and stir to coat the salmon with the sauce and veggies. Cook for another 1-2 minutes.
Remove from the heat and drizzle the sesame oil over the top. Sprinkle with the sliced green onions.
Serve hot with a side of steamed rice or noodles.
