Spicy Creamy Chilli Prawn Pasta

Ingredients
- 500 g spaghetti
- 500 g raw prawns
- 4 cloves garlic, finely chopped
- 1 red chilli, finely chopped
- Zest and juice of one lemon
- 1 tablespoon of olive oil
- salt to taste
- Chopped fresh parsley to garnish

Directions
Bring a large pot of salted water to boil. Cook the spaghetti according to the package instructions until al dente.
As the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and chilli. Cook for one to two minutes until they are fragrant.
Add the prawns to the skillet and sauté them until they are pink and cooked through.
Drain the pasta, reserving a cup of the pasta water.
Add the cooked pasta, zest and lemon juice to the skillet and toss well to combine. If needed, add the pasta water a little at a time to keep the dish moist.
Season with salt to taste and garnish with freshly chopped parsley.
Serve hot with a sprinkle of grated parmesan cheese over the top.
