Clean and remove the kingfish loins. To do this, make two horizontal cuts along the length of the fish, open it and remove the head. Trim the edges and the belly area. Next, de-spine the fish and cut off the tip of the tail. Using tweezers, remove any loose bones in the centre of the loins.

Add a drizzle of oil to a frying pan on heat. Add a pinch of salt and flour to the cleaned kingfish loins. When the oil is hot, add kingfish and sear on both sides. Remove on absorbent paper to remove excess fat.

For the hot marinade, add the onion, leek, carrot and chilli in the same pan. Leave to cook for about 5 minutes, and add the black pepper, bay leaves, a pinch of salt, water, apple cider vinegar and white wine. Add the kingfish, turn off the heat, cover the pan and leave to cook for about 30 minutes.
