- 11⁄2 l homemade stock
- grated cheese
- 1 tablespoon butter
- 6 slices of day-old bread
- 2 tablespoon Wheat flour
- salt
- ground black pepper
- olive oil

Peel and cut the onion into thin strips.

Put a dash of oil and the butter in a frying pan. Heat over a low heat until the butter melts and blends with the oil. Then add the onion, season with salt and pepper and cook for about 10 minutes.

Add the flour and stir while it is cooking. Cook for 3 minutes and then add the white wine. Cook for a further 2 minutes to allow the alcohol to evaporate.

Add the hot stock. Stir for two minutes to remove any lumps and leave to cook over a medium heat for a further 15 minutes.
