Tomato sauce
I'd like to share a basic recipe for a vibrant and tasty tomato sauce that I've made a few times. These are simple recipes that I believe anyone can easily make, and that always brighten up a pasta or pizza.
Ingredients
- 2 tablespoon olive oil
- 1 Medium onion, finely chopped
- 3 clove garlic, minced
- 800 g Canned tomatoes
- 1 small spoon salt
- 1⁄2 small spoon ground black pepper
- 1 teaspoon sugar
- fresh basil leaves

Heat the olive oil in a medium saucepan over medium heat. Make sure the oil is not too hot, otherwise the onions will burn, which can give your sauce a bitter taste.
Add the chopped onion and sauté until it becomes translucent, which will make the sauce even tastier.
Add the minced garlic and fry for 1-2 minutes until fragrant.
Add the canned tomatoes, salt, pepper and sugar. Use good quality canned tomatoes, because the flavour is much more intense than fresh tomatoes, and that's the flavour you're looking for in a good tomato sauce.
Bring the sauce to the boil, then reduce the heat and simmer gently for 20-25 minutes, until thickened.
When the sauce is the right consistency, remove from the heat and sprinkle with chopped fresh basil. If you like basil, feel free to add more, as it goes very well with the tomatoes and adds a richness of flavour.
