- 12 ounces of spaghetti
- 4 ounces of pancetta
- 3 large eggs
- 1 Cup parmesan
- 1 tablespoon freshly ground black pepper
- 1 tablespoon olive oil
- Salt, to taste
- Chopped fresh parsley, for garnish

Cook the pasta according to the package instructions. Save 1 cup of pasta water.
In a large skillet, heat the olive oil and cook the pancetta over medium heat until crispy.
In a mixing bowl, whisk together the eggs, Parmesan cheese, minced garlic, salt, and black pepper until well combined.
Add freshly cooked pasta to the bowl and stir well. The residual heat from the pasta will cook the eggs and create a creamy sauce.
If the sauce seems too thick, add the reserved pasta water a little at a time until desired consistency is reached. Season with salt to taste.
