Vietnamese Chicken Rice Paper Spring Rolls
Chicken Rice Paper Rolls are a crispy and delightful Vietnamese-inspired dish that is packed with fresh ingredients, proving the idea that healthy can also be tasty. These rolls are perfect either as an appetizer to complement your meal or a light but satisfying lunch on their own.
Ingredients
- 100 gms rice vermicelli noodles
- 8 rice paper sheets
- 200 gms cooked chicken breast, shredded
- 1 Cup shredded lettuce
- 1 large carrot, julienned
- 1 large cucumber, julienned
- fresh coriander leaves
- fresh mint leaves
- 2 spring onions, thinly sliced
- salt to taste
- Sweet chili sauce for dipping

Directions
Cook rice vermicelli noodles according to the packet instructions, then drain and let cool.
Wet each rice paper sheet in lukewarm water, then place it on a clean tea towel to absorb excess water.
Add a small amount of vermicelli noodles, shredded chicken, and a bit of all the vegetables at the bottom third of the rice paper.
Sprinkle with coriander, mint leaves and add a little salt to taste.
Fold in the sides and roll up tightly. Repeat with the remaining ingredients.
Serve immediately with sweet chili sauce for a perfect dipping experience!
