1. Step

Put the yeast in 1/3 of the water. Add to flour, salt, the rest of the water, olive oil, and sugar. Knead for 5 minutes, put in a bowl, cover, and let rise for 2 hours.

2. Step

Heat oil in a saucepan. Add chopped garlic and basil, and canned tomatoes. Season with salt and pepper. Bring to a boil and let simmer for 5 minutes, then puree.

3. Step

Preheat oven to 300 C. Divide dough in half and roll each into a ball, then flatten into a circle. Put half the sauce on each and spread out. Mix mature and pecorino cheese. Put half on each pizza, then half of the ricotta and half of the gorgonzola.

4. Step

Bake the pizza for 5 minutes. Add rosemary, oregano, olive oil, and parmesan. Cut, serve, and enjoy!
