Classic Christmas Cake
A traditional rich and fruity Christmas cake perfect for the festive season. The taste of this cake brings a festive feeling to everyone.
Ingredients
- 250 gms semolina sugar
- 250 gms unsalted butter
- 250 gms dried mixed fruit
- 250 gms self-raising flour
- 2 teaspoons ground mixed spice
- 4 Pieces large eggs
- 2 tbls brandy
- 50 gms Almonds
- 50 gms glace cherries

Directions
Heat your oven to 150C/130C fan/gas 2. Line a 20cm round cake tin with baking parchment.
In a large bowl, cream together the sugar and butter until fluffy.
Slowly add the eggs, one at a time, beating well after each addition.
Sift in the flour and spice, then fold in with a metal spoon along with the mixed fruit, nuts and cherries.
Pour the mixture into the prepared tin and level the surface with the back of a spoon.
Bake for 3 hrs or until a skewer inserted into the middle of the cake comes out clean. If the top is browning too quickly, cover with a piece of baking parchment.
Once baked, let it cool in the tin, then remove and wrap in baking parchment. It’s now ready to be stored until Christmas. Alternatively, the cake is ready to be decorated if you decide to do so. Enjoy!
