- 8 oz pasta
- 2 bell-peppers
- 1 carrot
- 2 cups tomatoes, halved
- 1⁄4 Cup chopped red onion
- 1⁄2 Cup Chopped fresh parsley
- 1⁄4 Cup olive oil
- 1⁄4 Cup red wine vinegar
- 2 tbls lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste

1. Step
Cook pasta according to package directions.
2. Step
While the pasta is cooking, prepare the vegetables.
3. Step
In a bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, salt, and pepper to make a dressing.

Add the cooked pasta, diced peppers, julienned carrot, cherry tomatoes, red onion, and parsley to the bowl.
5. Step
Toss everything until the vegetable and pasta are thoroughly coated with the dressing.
