Ebly pan vegetarian (wheat rice)
I discovered this recipe for a delicious Ebly pan a few years ago and it has been a permanent fixture in my repertoire ever since. Ebly is a wheat product like rice that is a nutritious and tasty addition to many dishes. Combined with fresh vegetables and spices, it makes a simple but delicious stir-fry that the whole family will love.
Ingredients
- 250 g Ebly
- 2 paprika (red and yellow)
- 300 g mushrooms
- 1 zucchini
- 1 onion
- 2 cloves of garlic
- 400 ml vegetable stock cube
- salt and pepper
- 2 tbsp olive oil
- Optional: grated cheese to sprinkle on top

To prepare the Ebly pan, start by cooking the Ebly in the vegetable stock according to the packet instructions. A quick tip: When cooking Ebly, similar to rice, the water should be completely absorbed by the grain. So do not pour off any water after cooking.
While the Ebly is cooking, cut the vegetables into bite-sized pieces. Make sure that the pieces are not too small, otherwise they may turn to mush in the pan.
Heat the olive oil in a large pan and fry the onion and garlic until they are translucent and aromatic.
First add the peppers and zucchinis and fry for about 5 minutes. Then add the mushrooms and continue to fry until all the vegetables are well done.
Mix the cooked Ebly into the vegetables in the pan. Season to taste with salt and pepper and leave to simmer for a few more minutes to allow the flavors to blend.
Optionally, you can now sprinkle the dish with grated cheese and simmer until the cheese has melted.
