Fresh Herb Goat Cheese Omelette
The tanginess of the goat cheese perfectly complements the fluffy eggs and fresh herbs, making this dish a well-rounded treat, not mentioning that it's nutritious.

- 4 large eggs
- salt to taste
- Black pepper to taste
- 1 tablespoon olive oil
- 2 tbls butter
- 1⁄2 Cup goat cheese, crumbled
- 2 tbls fresh herbs of your choice (e.g., chives parsley thyme)

Start by cracking your eggs into a bowl. Whisk them well until you have a uniform yellow mixture. While mixing, incorporate the salt and black pepper. It's best to season your eggs before they meet the pan for an evenly seasoned omelette.
In a non-stick pan suitable for omelettes (about 20 cms in diameter works well), heat the olive oil and butter over medium heat. Olive oil prevents butter from burning, meanwhile butter adds a nice flavor.
Once the pan is heated and the butter is melted, pour the egg mixture into the pan. Let it cook undisturbed until it begins to set around the edges, it usually takes about 2-3 minutes. Patience is key at this stage.
When your omelette starts to set, scatter the crumbled goat cheese evenly over half of the omelette. Don't overload it to maintain the omelette's structure.
Now, start to lift up the edge of the omelete with a spatula and fold it over in half. Cook for another minute, or until the cheese starts to melt. If you prefer your omelette more cooked, cover the pan for this step.
Finish it off with a sprinkle of fresh herbs right before serving. The herbs add a vibrant note to the rich omelette.
