Perfect Authentic Indian Style Basmati Rice

Ingredients
- 2 cups basmati rice
- 4 cups of water
- 2 tablespoon of vegetable oil
- 1 large onion finely chopped
- 2 cloves of garlic, finely chopped
- 1 thumb piece of fresh ginger, grated
- 1 stick cinnamon
- 5 whole cloves
- 1⁄2 teaspoon turmeric powder
- 1 bay leaf
- 1 stem of curry leaves
- salt to taste

Directions
Rinse the basmati rice under cold running water until the water runs clear. Soak the rice in cold water for 30 minutes, then drain and set aside.
Heat the oil in a large saucepan over medium heat. Add the chopped onion and sauté until lightly browned.
Add the chopped garlic and ginger to the saucepan and sauté until fragrant.
Add the cinnamon stick, cloves, turmeric, bay leaf, and curry leaves to the pan, stirring constantly for a couple of minutes until the spices release their aromas.
Stir in the basmati rice until all grains are well coated with the oil and spices.
Pour the water into the pan and add salt to taste. Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the pan with a lid and let it simmer for 20 minutes, or until the rice is tender and all the water has been absorbed.
Turn off the heat and leave the rice to steam in the pot for 5 minutes. Then, fluff the rice gently with a fork before serving.
