Simple Homemade Healthy Creamy Coleslaw

Ingredients
- 1 medium green cabbage, thinly sliced or shredded
- 2 carrots, peeled and shredded
- 1⁄2 of a red onion, thinly sliced
- 1⁄2 Cup of non-fat Greek yogurt
- 1⁄4 Cup of Apple Cider Vinegar
- 2 tbls of honey or other preferred sweetener
- 1⁄4 teaspoon of salt
- 1⁄4 teaspoon of ground black pepper
- 1 tablespoon of Dijon Mustard
- 1 tablespoon of lemon juice

In a large bowl, combine the cabbage, carrots, and red onion.
In another bowl, mix the Greek yogurt, apple cider vinegar, honey, salt, pepper, Dijon mustard and lemon juice together until well blended. This is your dressing.
Pour the dressing over the vegetables and toss to combine thoroughly, ensuring the vegetables are well coated with the dressing.
You can serve the coleslaw immediately, or for best results, cover and refrigerate for a minimum of 2 hours, allowing flavors to meld together.
