Smashed Sprouts Mash with Chestnuts
This delicious healthy recipe is for the fall season. The mashed brussel sprouts and chestnuts are to create a side dish that can be served alongside roasted meats or as a main vegetarian dish.
Ingredients
- 1 lb brussel sprouts
- 4 cloves garlic
- 1 Cup vegetable or chicken broth
- 1⁄2 Cup roasted chestnuts, chopped
- 2 tbls olive oil
- Salt and pepper, to taste

Begin by prepping the brussel sprouts. Trim off the stems and remove any wilted outer leaves. Rinse them thoroughly under running water and pat them dry using a towel.
2 In a large pot, bring water to a boil. Add the brussel sprouts and blanch them for 5-7 minutes. Drain the water and set them aside.
In a skillet, heat olive oil over medium heat and add minced garlic. Cook until fragrant, stirring constantly to avoid burning. Add chopped chestnuts and cook for another 2-3 minutes. Remove from heat and set aside.
Use a masher to smash the brussel sprouts. Add vegetable broth and the chestnut mixture, then mix everything together until it is well combined. Add salt and pepper to taste.
