Directions
In a bowl, mix the yogurt, lemon juice, cumin, paprika, coriander, turmeric, garam masala, chilli powder, and salt. Add the chicken pieces and coat them well with the marinade. Let it marinate for at least 1 hour, or overnight in the refrigerator for best results.
Preheat the grill or oven to medium-high heat. Thread the chicken pieces onto skewers and grill or bake until cooked through, turning occasionally. Remove from heat and set aside.
In a large skillet or pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it turns translucent and golden brown.
Add the minced garlic and grated ginger to the pan. Cook another 1-2 minutes until fragrant.
Pour in the diced tomatoes along with their juice. Bring the mixture to a simmer and let it cook until the softened sauce thickens slightly. Using an immersion blender, blend the tomato mixture until smooth, then return to the pan.
Reduce the heat to low and add the grilled chicken pieces to the tomato sauce. Stir well to coat the chicken evenly.
Pour the cream in and stir until well combined. Let it simmer for 5-10 minutes, allowing flavors to meld together.
Taste and adjust the seasoning if needed. Add more chilli powder if you prefer it spicier.
Garnish with fresh cilantro, and serve with steamed rice or naan bread.
