1. Step

Rinse the leg of lamb under cold water and pat dry with paper towels. Make small cuts all over the lamb using a sharp knife. Tuck slices of garlic into these cuts.

In a bowl, mix together the juice of 2 lemons, olive oil, oregano, salt and pepper. Pour this marinade over the lamb, making sure it gets into the cuts. Let it marinate for at least 2 hours.

Preheat your oven to 180°C (350°F). Place sliced onions and rosemary sprigs in a roasting pan as a bed for the lamb.

4. Step

Rest the marinated lamb on the bed of onions and rosemary. Pour the rest of the lemon juice over the lamb.

Cover the pan tightly with foil and roast in the preheated oven for 1 hour.

6. Step

After 1 hour, remove the foil and continue to roast for another 45 minutes or until the lamb is cooked to your taste.

7. Step

Let the lamb rest for 15 minutes before carving. Serve with the roasted onions and a side of your favorite vegetables or Greek salad.
