Best Roast Beef and Gravy in Slow Cooker
This slow cooker roast beef recipe is perfect for weeknights or lazy weekends. The beef becomes melt-the-mouth tender on a bed of onions and carrots in a rich gravy. Serve with creamy mashed potatoes and green beans for a comforting, satisfying meal.
Ingredients
- 1 kg beef chuck roast
- 1 onion
- 3 carrots
- 4 cloves garlic
- 11⁄2 cups beef broth
- 1⁄2 Cup red wine
- 2 tablespoon Worcestershire Sauce
- 2 tablespoon tomato paste
- 2 twigs fresh thyme
- salt and pepper to taste

Directions
Season the beef chuck roast generously with salt and pepper on all sides.
Heat a large skillet over medium-high heat and brown the beef on all sides.
While the beef is browning, add sliced onions and chopped carrots to the slow cooker.
Once the beef is browned, transfer it to the slow cooker on top of the vegetables.
Add minced garlic, beef broth, red wine, Worcestershire sauce, paste, and fresh thyme to the slow cooker. Stir to combine.
Cook on low for 8 hours or on high for 4 hours.
Once the beef is cooked, use two forks to shred and mix it with the vegetables.
