Canned Preserved Balsamic Sweet Onion Marmalade
Onion marmalade is a delightful serve that adds a blast of flavor to any dish it accompanies, be it sandwiches, cheese boards, or roasts. This rich, tangy, and sweet preserve guarantees to spruce up your meals, making it an indulgence you wouldn't resist. Homemade, so you know it's free of any artificial additives!
Ingredients
- 1 kg red onions, finely sliced
- 4 cloves of garlic, finely sliced
- 2 tbls olive oil
- 2 tbls balsamic vinegar
- 70 gms brown sugar
- 60 ml red wine
- salt and pepper to taste

Directions
Heat olive oil in a large non-reactive pot over medium heat.
Add onions and garlic to the pot, stirring until they begin to soften.
Stir in a pinch of salt and reduce the heat to low. Allow the onions and garlic to slow cook for about 40 minutes, stirring occasionally, until they caramelized and become jammy.
Sprinkle in brown sugar and continue stirring until the sugar is fully dissolved into onion mixture.
Pour in the balsamic vinegar and red wine. Increase the heat to medium and let it boil.
After the boil, reduce the heat allowing it to simmer gently. Keep stirring until the mix becomes thick and the liquid has completely evaporated.
Season with salt and pepper to taste.
Allow the marmalade to cool before transferring it into clean, sterilized jars. Keep it in the fridge and use within a month.
