Directions
Start off by preheating your oven to 180-degree Celsius. This gives you enough time to prepare your ingredients and ensures that the oven is hot enough for the chicken.
Season both sides of your chicken fillets generously with salt and pepper. This bit is essential, as it helps bring out the natural flavor of the chicken.
Heat the olive oil on a stove-top skillet over medium heat. Adding the oil not only prevents the chicken from sticking but also contributes to the overall flavor of the dish.
Sear the chicken fillets until they are golden brown. The reason behind browning the chicken is that it helps lock in the juices, leaving you with tender and flavorsome meat.
Take a suitably sized baking tray and pour the risoni pasta all over the bottom of it. The risoni will absorb the flavor of the chicken and stock, becoming incredibly delicious.
Add chicken stock to the tray, ensuring that all the risoni is covered. Pouring the stock over helps the pasta cook evenly.
Place your seared chicken breasts on top of the risoni.
Mix the cream, parmesan, thyme, and rosemary in a bowl and pour this mixture over the chicken and risoni in the tray. This indulgent, creamy sauce will bake into the chicken and pasta, enhancing their flavors.
Place the tray into the preheated oven. After 20 minutes of the dish baking, I advise you to check it to avoid overcooking.
Check total baking time around 20-25 minutes, or until the chicken is thoroughly cooked and the pasta is tender.
Finish off with a sprinkle of freshly chopped parsley for garnish before serving.
