Thai Ground Chicken Larb Gai Salad
Thai Larb Gai is a tempting combination of ground chicken, fresh herbs, and zingy lime dressing served with crisp lettuce leaves. This traditional Thai salad is light, refreshing, and bursting with exotic flavors. It is incredibly healthy, low on calories, and perfect for a light lunch or dinner.
Ingredients
- 1 lb ground chicken
- 3 tbls Fresh Lime Juice
- 1 tablespoon fish sauce
- 1⁄2 teaspoon brown sugar
- 2 red chilies finely chopped
- 1 stalk lemongrass finely chopped
- 3 shallots thinly sliced
- 2 green onions sliced
- 1 a handful fresh mint leaves roughly chopped
- 1 a handful fresh cilantro roughly chopped
- 1 head lettuce separated into leaves
- salt and pepper to taste

Cook the ground chicken in a large pan over medium heat. Break it up with a spatula or spoon, and sauté until it is fully cooked with no pink remaining.
While the chicken is cooking, prepare the dressing. Combine the lime juice, fish sauce, brown sugar, chopped red chilies, and chopped lemongrass in a small bowl. Stir until the sugar dissolves.
Drain any excess fat off from the cooked chicken, then pour the dressing over the meat in the pan. Stir well, ensuring the chicken is nicely coated with the dressing.
Add the sliced shallots, green onions, mint, and cilantro to the pan. Toss everything together.
Season with salt and pepper according to your taste. Give everything one final stir.
Serve the Larb Gai in lettuce leaves, like a lettuce wrap, or serve over rice if preferred. Garnish with extra herbs or a wedge of lime for an extra punch.
